Your inspection
Environmental Health (Government of Jersey) inspects food businesses. How often depends on the risk of the business.
After a visit the officer tells you what to put right and by when. Serious problems can lead to a notice, a stop to part or all of the business, or court. The research did not confirm the fine amounts, so Chef Hygiene names none.
Hygiene rating
Eat Safe gives 0, 2, 3, 4 or 5 stars (there is no 1 star). The Food Safety (Eat Safe Rating) (Jersey) Order 2017 requires the sticker at customer entrances. Whether this changes under the Food (Jersey) Law 2023 is not yet confirmed: ask Environmental Health.
“Law” is a binding rule. “Official guidance” is not law, but inspectors expect it. “Chef Hygiene default” is a value the app checks against where no rule gives a number.
Temperatures
- LawChilled food at 8°C or colder, as in the UK. Chef Hygiene checks the fridge against 5°C, its own safer target. The research treats 8°C as the rule, but did not read the new Food (Jersey) Regulations.
- LawHot food at 63°C or hotter, as in the UK. Chef Hygiene sets no grace time below 63°C: reheat at once or throw away.
- Official guidanceCool cooked food as quickly as possible: into the fridge within 90 minutes is good practice.
- Official guidanceCooking and reheating: 75°C in the core (or 70°C for 2 minutes). This is good practice.
- Official guidanceFrozen food: −18°C or colder. This is standard practice.
Staff, training and health
- Official guidanceFood handlers should be supervised and trained in food hygiene for their work. This is good practice, and the Eat Safe audit checks it. Jersey sets no certificate renewal the research could confirm.
- Official guidanceStaff with diarrhoea or vomiting stay away from food until 48 hours after the symptoms stop. This is UK-style guidance.
Allergens
- Official guidanceGive allergen information for the 14 allergens for food that is not prepacked. The new Food (Jersey) Regulations cover allergen information; the research did not read their exact words.
- Chef Hygiene defaultThe research did not confirm whether Jersey needs this in writing. Chef Hygiene checks for a written list per dish and an “ask staff” sign. This is the app’s default.
Fire safety checks
- Chef Hygiene defaultThe research found no Jersey fire or electrical interval it could confirm. The checks below are good practice, not Jersey law. They can be edited. In a fire, call 999 or 112.
- Chef Hygiene defaultExtinguishers: Chef Hygiene suggests a yearly service by a competent person. Fire alarm: every 6 months. Emergency lighting: yearly.
