“法律”是指具有约束力的规则。“官方指南”并非法律，但检查人员会参考它。“Chef Hygiene 默认值”是指在没有规则给出具体数值的情况下，应用程序会检查的值。

• 法律Keep the register SFA asks for, show where your food comes from when asked, and, for caterers, keep the records of your food safety management system. We found no general period for keeping records in the law: keep them as long as SFA or your plan asks.
• 官方指南Digital records are allowed: there is no government records app. SFA's Track Records is only a public look-up of grades.
