“ਕਾਨੂੰਨ” ਇੱਕ ਲਾਜ਼ਮੀ ਨਿਯਮ ਹੈ। “ਅਧਿਕਾਰਤ ਮਾਰਗਦਰਸ਼ਨ” ਕਾਨੂੰਨ ਨਹੀਂ ਹੈ, ਪਰ ਨਿਰੀਖਕ ਇਸਦੀ ਉਮੀਦ ਕਰਦੇ ਹਨ। “Chef Hygiene ਡਿਫਾਲਟ” ਇੱਕ ਮੁੱਲ ਹੈ ਜਿਸਦੀ ਜਾਂਚ ਐਪ ਕਰਦੀ ਹੈ ਜਿੱਥੇ ਕੋਈ ਵੀ ਨਿਯਮ ਨੰਬਰ ਨਹੀਂ ਦਿੰਦਾ ਹੈ।

• ਕਾਨੂੰਨHACCP is required (EU Regulation 852/2004, article 5). Critical points are recorded in writing or electronically (decree 137/2004, § 38).
• ਕਾਨੂੰਨKeep monitoring records, limit breaches and corrective actions for 14 days from the production date of the dish.
