The records and registrations your kitchen must keep.

“Law” is a binding rule. “Official guidance” is not law, but inspectors expect it. “Chef Hygiene default” is a value the app checks against where no rule gives a number.
- LawYour own-check (omavalvonta) must find and control hazards, and you must record the results (Food Act, § 15; EU Regulation 852/2004, article 5). No own-check can bring a sanction fee.
- LawKeep own-check records at least 1 year after the use-by or best-before date, or 1 year after handling if the food has no date (decree 318/2021, § 22).
- LawKeep traceability data at least 1 year from sending or receiving the food.
