United States: records to keep

The records and registrations your kitchen must keep.

Checked

“Law” is a binding rule. “Official guidance” is not law, but inspectors expect it. “Chef Hygiene default” is a value the app checks against where no rule gives a number.

  • LawOSHA: report a death within 8 hours, and an in-patient hospital stay, an amputation or the loss of an eye within 24 hours. Call 1-800-321-6742 or use osha.gov/report.
  • LawFull-service restaurants and limited-service eating places are partly exempt from keeping OSHA injury and illness records, but must still report the severe events above.
  • LawSome states run their own OSHA State Plan that covers private businesses, for example California and Oregon. A restaurant there deals with the state plan. In other states, restaurants are under federal OSHA.
  • LawTime as a public health control needs written procedures, and ready-to-eat food kept more than 24 hours needs a consume-or-discard date mark (Food Code 3-501.19 and 3-501.17).
