“Law” is a binding rule. “Official guidance” is not law, but inspectors expect it. “Chef Hygiene default” is a value the app checks against where no rule gives a number.

Official guidanceWe advise giving customers information on the 14 allergens (the same list as the EU), in writing: on a poster, a board or the menu. We could not confirm the allergen rule for restaurants.
